Sigh. Sorry about the long reply.
Try a primary fermentation in a glass bottle and hold a tightly focused flashlight, a small mag light with a focus beam will do the trick. I had Lynda check it out to confirm my observations, those many moons ago. It happens the first couple of days of fermentation when they are the most active. Could be they are trying to get away from the light, but clearly the yeast become agitated by shining a light into the carboy. If you get a paper out of this, feel free to buy me a beer.
As I recall, aren't you the eminent scientist who insisted I would die of thirst because I drank hot tea on day?

Gavin,
How much did you drink to see yeast dance? I want a keg of that stuff!
In scientific publications, I can find only that yeast have some transporters and repair mechanisms work slightly differently if you shine light of certain wavelengths on them. Pretty subtle stuff. To my knowledge, they have no phototaxis (why would they when they don't need light?), and have no flagella to swim (they ride CO2 bubbles up when your beer is fermenting). If you have a reference for light reactivity, please pass it on - I,m always curious about such things.
However, I have seen that yeast do refract light; they can kinda look like wisping clouds when in solution and you shine light on them. If you swirl the flask, they look like a swarm. I suspect this is the basis of you dancing yeast? (perhaps you ment refractive rather than reactive?) Sorry about being such a nurdy scientist.

Attack of the Mushroom People used to give me nightmares as a kid. I suppose it still would, but probably for a different reason. Yeast is light-reactive and you can make them do cool dancing tricks with a flashlight, before you let them die of starvation and then drink their excrement. Just saying.
Your drinking and beer-brewinging buddy.

Yeast is a eukaryot, but not an animal. Nor is it a plant (thus not consumable by a true 'vegitarian'?). It is in the kingdom of Fungi. Minor point, but just saying...

Hi Gavin,
I'm so very sorry to hear about your "Mum's condition and I hope she's on the mend soon!
I recently revived my account's website with Hypermart and found the "pet" project we both worked on to be still preserved as it was in 2006.
Since I've been out of work for the last three months following a recent lay-off from a IT Support job I had with an agency and in conjunction with the Palo Alto Unified School District since December-2008, I felt compelled to do something useful with my useless existence!
Would you care to re-collaborate and update the website with me again, I thought it would be fun for both of us---plus we'd get re-acquainted again with our lives and what either of us have been doing lately.
Sound like fun? I have the Dreamweaver-8 in my Apple G$ computer and the original data from three years ago. Plus we could do this now, in the light of Facebook and My Space and do it this time correctly. It just might be a bigger trend, now with the Economic downturn then we realize.
What do ya say Gavi? Plus you could revive MovieMemes once again and start you writing of movies reviewed like you used to as I listed you in the website, etc.
Call me (408) 246-5887 and let's start Skyping again my friend!
Cheers and goodwill,
Michael Shayman

Gavin,
I'm so sorry to hear about your Mum, and what happened to her just recently there in San Diego/Santee. I hope she's "on the mend" soon.
So where's Lynda hiding? I hope you're both together---I'm sure you are.
Do you have the house to take care in San Diego? Do you need my help?
Ya know...since I'm not working, I'd love to come down there and help you any way I can-please accept my invitation to assist!
